Why You’ll Love This Recipe

  • Perfectly thick and creamy: The secret is in the preparation, especially removing excess moisture from the cucumber.
  • Simple, everyday ingredients: No complicated techniques or hard-to-find ingredients.
  • Easy to make ahead: A little time in the refrigerator allows the flavors to blend beautifully.
  • Versatile and delicious: Enjoy it as a dip, a spread, or a refreshing accompaniment to your favorite Greek dishes.

My Tips for the Perfect Tzatziki

  • Remove the garlic germ: Slice the garlic cloves in half lengthwise and check for the small germ running through the center. It may be pale yellow, light golden, or green. Carefully remove it with the tip of a knife to help reduce bitterness and give your tzatziki a smoother, more balanced garlic flavor.
  • Thoroughly drain the cucumber: Grate the cucumber using the large holes of a grater for the best texture. Sprinkle with salt, mix well, and let it rest for 5 minutes. Then squeeze out as much liquid as possible. Removing excess moisture is the secret to thick, creamy tzatziki that won’t turn watery.
  • Let the garlic mixture rest: Combine the crushed garlic with vinegar, olive oil, and a pinch of black pepper. Let the mixture sit for a few minutes before adding it to the yogurt. This helps mellow the garlic’s sharpness and allows the flavors to blend beautifully.
